Chicken Florentine Casserole

Love the chicken spinach combination. Don't understand why so many reviewers changed it into something very different. To suit our tastes I browned the chicken on each side because that is the way we like it - otherwise made as instructed. Thanks for a tasty and reliable recpe.

Baked Apples

Love baked apples - these need to cook a little longer. My favourite filling is mincemeat (even if it isn't Xmas). No extra sugar or butter added.

Pol's Apple Cake

A lot of reviewers have complained that this is dry and crumbly - here are some suggestions. First, you might want to omit the coconut which can gave a dry "finish" to a cake. Also, please check that your self-raising flour is very fresh and lastly do not overbake. These are the steps that I followed and it worked.
