A nice and healthy side recipe but it misses something to be a real winner. I added a few tablespoons half and half and found it was a great addition.

Bacon Potato Omelet

What's not to like in this artery-clogging delight? Boyfriend said I could make it again anytime! I used more eggs since 3 weren't enought to cover all the potatoes.

Roasted Roma Tomatoes and Garlic

Easy, elegant and bursting with flavours! I sprinkled a little parmesan cheese on top of tomatoes before serving but this is a great side dish even without this addition.
